Changes to Recipe. After the earlier choking in 25.01.11 Dialing In (2) Los Bellotos on La Pavoni Europiccola I decided to go coarser.
Notes. The shot was choking again, however, again, the pressure was stable at 9 bars. I’ve pulled it earlier, at around 20 g. I probably should’ve pulled it later, at around 24-26 g. It was ok, somewhat balanced, a good acidity but too harsh.
