Notes. I’ve produced three shots using this recipe, one after the other. All three were good, sweets, balanced. The second however was a bit harsh, probably was the fact that the water chamber was too hot. This has lead to an expansion of the puck, leading to under-extraction, I’ve also experienced the pressure going way up (around 14-16 bars). To avoid this in the third case I’ve washed the chamber with cold water before then pre-heating the chamber. All shots were produced to have a 1:2 ration, 14g in, 28 g out.
