Changes to Recipe. From previous try (24.10.15 (1) Dialing in The Steam & Co. on Wacaco Picopresso), upped the clicks to 1.6.1 on 1ZPresso JX-Pro for a courser grind.
Notes. Bitter is now perfect, sweet, round, moderately acidic in a good way. Body same as before, perfect crema, hits the right organoleptic features.
This will be now the go-to recipe for this combination. Saved as of now in the standard recipe page (Espresso with The Steam & Co., 1ZPresso Jx-Pro on Wacaco Picopresso). Reporting it now if the Reference Recipe changes in the future.
Procedure.
- Heat water in kettle;
- Grind The Steam & Co. Coffee with 1ZPresso JX-Pro with 1.6.1 clicks settings;
- Prepare coffee puck by using needle, screen and tamper;
- Pre-heat both Coffee Glass and the Wacaco Picopresso;
- Pump water through until you feel a bit of resistence from the puck (around ten pumps) and wait 10 seconds;
- After the pre-infusion, pump until you reach 32 g of coffee out.
